Cupcakes are a great go-to dessert and not just for kids. We’ve put together many a party dessert table filled with all kinds of treats and inevitably the cupcakes are the first to be eaten. (And that includes parties where most of the guests are adults!). We love this Chocolate Chip Cupcakes with Mocha Whipped Cream Frosting recipe because it is so easy to make but it tastes great and with the light and yummy Mocha Whipped Cream Frosting it is also a little bit “fancy.” Next time you need a dessert but don’t have a lot of time … give this one a try.
Make up a box of White Cake Mix according to the instructions at the box. We used the instructions calling for egg whites instead of the whole egg so that the cupcakes would be truly white. If you want a few tips and trick on how to make a box cake mix taste like homemade check out our Working with Cake Mixes post.
Once completely mixed, we manually stirred in the 1/2 cup of Mini Chocolate Chips. The key here is using the mini version of the chocolate chips. We have found that the regular sized chocolate chips sink down to the bottom of the cupcake liner during the baking process.
Fill your cupcake liners 3/4 full with the Chocolate Chip Cupcake batter.
Bake the cupcakes in a 350 degree oven for 18-20 minutes.
Now make a batch of our amazing The Mocha Whipped Cream Frosting. Light, airy, not too sweet and flavored with chocolate and coffee, this is the perfect frosting for these Chocolate Chip Cupcakes. You will find detailed instructions on how to make the frosting here.
We used a decorating bag and a Wilton 2D Decorating Tip to swirl on the The Mocha Whipped Cream Frosting. You can see a video on how to make this frosting swirl right here.
