These yummy and adorable Despicable Me Minions Rice Krispie Treats are made out of crunchy, marshmallow-y Rice Krispie Cereal. Cute! Fun! Easy!

We’ve made a lot of Rice Krispie Treats here at Two Sisters Crafting, it is one of our favorite go-time desserts.  I have to say that, so far, these Minions Rice Krispie Treats are my favorites.   They are adorable (and tasty) and so fun to make.   We are going to have to convince one of the kids in our life to have a Minions Birthday Party so we can make these again!

How to make the Rice Krispie Treat Mixture

The base for our Minions Rice Krispie Treats is our Best Ever Rice Krispie Treat Recipe which we have adjusted and perfected over the years until it is now absolutely the best Rice Krispie Treat recipe we have ever tasted.  You can all the directions you’ll need to make these delicious treats right here.

How to Color the Rice Krispie Treat Mixture

Step 2 and Step 4: For the first batch of Rice Krispie Treat mixture we used 3 tablespoons of Butter, 3 Cups of Mini Marshmallows and 3 Cups of Rice Krispie Cereal. For detailed instructions on how to make the Rice Krispie Treat mixture, check out our Best Ever Rice Krispie Treat Recipe.  We added the food coloring to the melted marshmallow mixture BEFORE adding the Rice Krispie Cereal. To get this shade of blue, we added 6 drops of blue food coloring and 1 drop of red food coloring.
Step 3 and Step 5: For the second batch of Rice Krispie Treat mixture we used 4 1/2 tablespoons of Butter, 4 1/2 Cups of Mini Marshmallows and 4 1/2 Cups of Rice Krispie Cereal. To get this color of yellow, we added 6 drops of yellow Wilton Color Right food coloring to the marshmallow mixture before we added the Rice Krispie Cereal.

Assembly Instructions

Step 6: Allow the Rice Krispie Treat mixture to cool slightly. You want it to be cool enough to touch but warm enough to manipulate.  For the blue “over-alls” section of the Minions Rice Krispie Treats I measured 1 oz. of the blue mixture and molded it into a small cylinder.  If the mixture is too sticky to work with you can put some butter on your fingers. That works like a charm. I was able to make 8 blue cylinders with the 3 cups of Rice Krispie Treat mixture.
Step 7: Set the blue pieces on a cookie sheet to cool while you make the yellow Rice Krispie Treat mixture.

Step 8: Again, allow the mixture to cool.  Then we measured 2 oz. of yellow Rice Krispie Treat mixture and molded it onto the blue cylinder.
Step 9: Using my hands, I shaped it into the shape of a minion. As the Rice Krispie Treat mixture cools, the two pieces will stick together into one adorable Minion body. I was able to create 8 Minions Rice Krispie Treats with the amounts of Rice Krispie Treat mixture indicated above.

Ingredients

  • 7 1/2 cups Kellogg’s Rice Krispies Cereal
  • 7 1/2 teaspoons Butter (We use Salted, Sweet Cream Butter)
  • 7 1/2 cups Mini Marshmallows
  • Black Icing
  • Wilton Color Right Food Coloring System – Yellow
  • Wilton Color Right Food Coloring System – Blue
  • Wilton Color Right Food Coloring System – Red
  • 4 Wilton Candy Eyes – Large
  • 8 Wilton Candy Eyes – Medium

Instructions

  7. Once the minions have cooled, grab your Wilton Candy Eyes and some black icing. We used store bought black icing but you could also make up a small batch of Royal Icing and tint it black.
  8. Some Minions have one big eye and some have two eyes. They all wear goggles. Use the black icing to make the goggles and the minion’s mouth.  Press the Wilton Candy eyes into the black icing.
