Due to my family’s restrictions/preferences I used a vegan margarine and almond milk. My caramel did not look like the one in the photos above (I assume because the non-dairy ingredients don’t react the same way), but I tasted it and it was OK so I went ahead and made the icing. I did need more icing sugar than the recipe called for but that’s not a big deal, and may have been because my caramel didn’t cook the same. The finished product tasted great and I was happy with it. I made it over the past weekend to cover a Vanilla cake from scratch and it was a hit! One thing I added was a teaspoon of caramel syrup (Hershey’s) to add in a little more flavor. Also, i didn’t make enough to frost between the layers, but i know next time to up the serving size while making. Happy baking while staying safe

Hi Brock – we agree with you. If we need more than one batch of frosting we usually make them in separate batches instead of one big batch. It is so much easier to control the taste and the consistency in smaller batches.

I’m worried that the mixture will burn or not cook properly in the saucepan if there is that much volume, especially when the instructions say not to stir. What do you think?
