Springtime Confetti Cake Bites
A unique take on a cupcake these fun Springtime Confetti Cake Bites will wow your party guests this Easter, Mother’s Day, Spring Brunch or Birthday.
Sometimes a cake is too much work but a cupcake isn’t “fancy” enough for the occasion .. . when that happens we make Cake Bites! Same yummy cake and delicious Buttercream frosting but in a fun mini cake style that always wows party guests. These gorgeous and delicious Springtime Confetti Cake Bites are super easy to make and will be a guaranteed hit as an Easter dessert, a Mother’s Day treat or a Spring Brunch snack.
We started with a mix of green, pink and purple Jimmies sprinkles. You will need 1/2 cup of sprinkles.
We made up a box of White Cake Mix according to the instructions at the box. Once completely mixed, we manually stirred in the 1/2 cup of sprinkles.
Instead of baking it in a traditional cake pan we lined a cookie sheet with parchment paper and poured the cake mix onto it.
We let the cake batter sit on a flat counter for 10-15 minutes to allow it to settle and even out.
Bake the cake in a 350 degree oven for 17-20 minutes.
Once the cake has cooled you can cut out your round mini cake bites. We used a 2″ round biscuit cutter. We made 27 cake bites out of this cake.
Now you need to make some of our amazing The Best Buttercream Frosting. How much frosting will you need? That depends on how much frosting you add to your cake bites. We made two batches of frosting and divided it into three equal portions. We tinted the frosting green, pink and purple using our Wilton Color Right Food Coloring in the following combinations:
Green – 3 drops of yellow and 1 drop of blue
Pink – 3 drops of pink
Purple – 3 drops of pink and 1 small drop of blue
Add a layer of The Best Buttercream Frosting between the two pieces of confetti cake.
Finally, add a small swirl of The Best Buttercream Frosting to the top of the Springtime Confetti Cake Bites and then sprinkle on a few Confetti Sprinkles. One note about the cake bites … if you are going to make these ahead of a party, store them in the refrigerator in an airtight container because unlike a cupcake that is protected by a cupcake liner, the sides of the cake bite are exposed and will dry out if left out too long.
These Springtime Confetti Cake Bites are really yummy and super colorful and pretty. They would be great as an Easter dessert, a Springtime brunch, a baby shower, a birthday … who are we kidding? They would be great for any occasion!

Instructions
- Make up a box of White Cake Mix according to the instructions at the box.
