Lemon Sugar Cookie Bars
A lemon-y twist on a classic cookie bar, our Lemon Sugar Cookie Bars are sweet and tart and delicious.
If you love Lemon like we love Lemon then we think you’re gonna love our Lemon Sugar Cookie Bars. The cookie bars are infused with a subtle lemon flavor (and a handful of sprinkles for good measure). And on top? Heavenly Lemon Cream Cheese Frosting. This is an easy dessert bar that packs a powerful Lemon-y punch!
Start by juicing and zesting a lemon. You will need 1/4 cup of lemon juice and 1 heaping teaspoon of lemon zest. For us, that was one large lemon.
Now make up a batch of our Sugar Cookie Bar dough. You can find detailed instructions for making Sugar Cookie Bars right here. The only difference will be that you need to add the lemon juice and lemon zest along with the eggs and to use 5 1/2 cups of flour instead of 5 cups of flour.
This is optional, but we jazzed up our Lemon Cookie Bars with some Yellow sprinkles. Add them to the dough at the end after the flour.
To get the Lemon Sugar Cookie Bars ready to bake, cover a cookie sheet with parchment paper.  You can skip this step and grease the cookie sheet instead but the parchment paper will really help the edges of the cookies to not brown during the baking process.  Pour all of the dough out onto the prepared cookie sheet. Press the dough down onto the cookie sheet. You want the dough to be about 3/4″ high. It will rise to about 1″ high during the baking process. Bake the Sugar Cookie Bars in a 375 degree oven for 10-15 minutes.  Do not over bake the cookies.  It will not come out of the oven a deep golden brown – in fact, it might look a little un-done but it is not.  Use a toothpick to test it, if the toothpick comes out clean it is done.  If you bake these cookie bars too long they will be dry.

Let the cookie bar cool completely and then frost them and just for fun add some pretty sprinkles.

Lemon Sugar Cookie Bars
A lemon-y twist on a classic cookie bar, our Lemon Sugar Cookie Bars are sweet and tart and delicious.
Ingredients:
- 1 cup butter
- 2 cups sugar
- 4 eggs
- 2 tsp. vanilla
- 1/4 cup Lemon Juice
- 1 heaping teaspoon Lemon Zest
- 5 1/2 cups flour
- 1/2 teaspoon baking soda
- The Best Lemon Cream Cheese Frosting
- Sprinkles
- Juicer
- Microplane
- Wilton Color Right Food Coloring System
- Cookie Sheet
- Parchment Paper
Directions:
- Cream butter and sugar.
- Add eggs, vanilla, lemon juice, lemon zest and mix.
- Add dry ingredients, mix well.
- Add sprinkles (optional)
- Spread on cookie sheet covered with parchment paper.
- Bake at 375 degrees for 10-15 min or until a toothpick comes out clean. Do not overbake!
- Cool.
- Frost with The Best Lemon Cream Cheese Frosting.
