How to Make the Pumpkin Cookie Dough
Step 1: In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla and then the pumpkin. Then add the cinnamon, baking powder, baking soda, and salt. Mix well. Finally, add the flour and combine until the flour is completely incorporated into the cookie dough.
Baking Instructions
Step 2: We dropped the cookie dough onto the cookie sheet. These cookies rise quite a bit so we pressed down the cookie dough before putting them in the oven.
Step 3: Bake the cookies in an oven preheated to 375 degrees for 13-15 minutes or until golden brown around the edges. Here are the cookies just out of the oven. Golden brown and delicious and chock full of pumpkin flavor.

Pumpkin Cookies with Pumpkin Spice Frosting
Our Pumpkin Cookies with Pumpkin Frosting are light and fluffy cookies topped with a creamy Pumpkin Spice Buttercream Frosting. So yummy and perfect for Fall.
Ingredients
- 1 cup Butter (softened - we use Sweet Cream Salted Butter)
- 1 cup Granulated Sugar
- 1/2 cup Brown Sugar (packed)
- 2 Large Eggs
- 1 teaspoon Vanilla Extract
- 1 can Pureed Pumpkin (15 oz.)
- 3 1/2 cups All-Purpose Flour
- 3 teaspoons Cinnamon
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1 batch of our The Best Pumpkin Spice Buttercream Frosting
Instructions
- In a large bowl, cream butter and sugars until light and fluffy.
- Beat in eggs and vanilla.
- Mix in pumpkin puree.
- Mix in cinnamon, baking powder, baking sold and salt and mix well.
- Add Flour and combine until the flour is completely incorporated into the cookie dough.
- Drop cookie dough onto cookie sheet. We pressed the dough down slightly before baking as these cookies rise quite a bit.
- Bake the cookies in a 375 degree oven for 13-15 minutes or until golden brown around the edges.
- Allow cookies to cool.
- Frost with our delicious The Best Pumpkin Spice Buttercream Frosting.
