Hi, my name is Nancy and I have a cookie-cutter addiction. (Hi Nancy!) They say admitting it is the first step. The thing is…I can’t help it. Whenever I see cookie cutters, I end up buying one or two (or three or four). Last year I bought some spring cookie cutters. This year when Laurie and I were coming up with Easter ideas I knew I wanted to use them somehow. Laurie whipped up a batch of Rice Krispie treats and that is how our Springtime Rice Krispie Treats Dipped in White Chocolate were born. They were a big hit on Easter but they’d also be fun for a baby shower, a springtime brunch, or even a kid’s birthday party.
A Note About Cookie Cutters
These are the Spring/Easter cookie cutters that we used to make these colorful Rice Krispie Treats – a bunny, a butterfly, a tulip, and a duck. You can you any cookie cutters that you have around the house. The best cookie cutters will be ones that are at least 2″ tall/wide and don’t have a lot of intricate edge details that would make the Rice Krispie Treats hard to remove from the cookie cutter.
How to Make the Rice Krispie Treat Mixture
The base for our Chocolate Covered Rice Krispie Treats is our Best Ever Rice Krispie Treat Recipe which we have adjusted and perfected over the years until it is now absolutely the best Rice Krispie Treat recipe we have ever tasted. You can find all the directions you’ll need to make these delicious treats right here. We made the White Chocolate Dipped Rice Krispie Treats in Yellow, Blue, Pink, and Purple so you will need to make four separate batches of Rice Krispie Treat mixture. You will find directions on how to make the colored Rice Krispie mixture below.
How to make Yellow Rice Krispie Treats
For each color batch of Rice Krispie Treats you make you will need 2 tablespoons of butter, 2 cups of marshmallows, and 2 cups of Rice Krispies Cereal. Melt the butter in a large pan on medium heat. Add the marshmallows and stir until melted. Add 2 drops of yellow Food Coloring to the marshmallow mixture and stir until it is combined and it is the shade of yellow you like. Finally, add the Rice Krispie Cereal and stir until they are covered with the yellow marshmallow mixture. Allow the yellow Rice Krispie Treat mixture to cool enough so you can handle it but that it is still malleable. Start filling the cookie cutters to form the springtime-themed treats. We like molding the mixture into the cookie cutters this way instead of making a sheet of Rice Krispie Treats and cutting out the shapes like a traditional cookie. You will have smoother and prettier edges this way. Once you have the cookie-cutter filled with the Rice Krispie Treat mixture, press the Rice Krispie Treat out the back of the cookie cutter and make another one. I was able to make 3 Rice Krispie Treat Bites from this 2 cup batch of Rice Krispie Treat Mixture and the size cookie cutters we were using.
How to Make Blue Rice Krispie Treats
Repeat the process outlined for the Yellow Ducky Rice Krispie Treats for the blue version but add 2 drops of Blue Wilton Color Right Food Coloring to the marshmallow mixture BEFORE you add the Rice Krispie Cereal.
How to Make Pink Rice Krispie Treats
Repeat the process outlined for the Yellow Ducky Rice Krispie Treats for the blue version but add 2 small drops of Pink Wilton Color Right Food Coloring to the marshmallow mixture BEFORE you add the Rice Krispie Cereal.
How to Make Purple Rice Krispie Treats
Repeat the process outlined for the Yellow Ducky Rice Krispie Treats for the blue version but add 4 drops of Pink Wilton Color Right Food Coloring and 2 drops of Blue Wilton Color Right Food Coloring to the marshmallow mixture BEFORE you add the Rice Krispie Cereal.
How to Dip the Rice Krispie Treats in White Chocolate
Step 1: We wanted to add a little something special to our Rice Krispie Treats so we decided to dip the bottoms in White Chocolate. We used Ghirardelli White Melting Wafers which tastes great and are very easy to melt.
Step 2: We took 25-30 wafers and melted them in the microwave. We started with 30 seconds, stirred the chocolate, and then microwaved them for another 10 seconds. If they are still not completely melted, continue this process in 10-second intervals until they are. This amount of white chocolate was enough to cover the bottoms of about 7-8 Rice Krispie Treats. This number will obviously vary for you depending on how big of a cookie-cutter you used and how thick you want the chocolate layer to be.
Step 3: We laid the Springtime Rice Krispie Treat into to bowl of chocolate and swished it around a bit to get the chocolate up the sides a tiny bit.
Step 4: Then we placed the Rice Krispie Treat on a piece of parchment paper, chocolate side up, so it could dry.
Step 5: If you really like White Chocolate, you could do another dip into the chocolate once the first layer is completely dry which is what we have done here.
Expert Tips & FAQS
Food Coloring Tips
We use the Wilton Color Right Food Coloring. We think it gives you a really vibrant color without having to add so many drops of food coloring. You can also use the base colors to make any color in the rainbow which is helpful. Rice Krispie Treats are super easy to color, so there is no need to ever make beige ones again. The only thing to remember is that you need to add the food coloring to the melted marshmallow and butter mixture. Once you have the perfect color, then add the Rice Krispie Cereal. Easy Peasy!
Storage Instructions
Allow the Rice Krispie Treats to cool before you store them. This is a great Easter treat and you can make it well ahead. Rice Krispie Treats freeze up great in an air-tight container. And will last for up to a week at Room Temperature.

Ingredients
- 8 cups Kellogg’s Rice Krispie Cereal
- 8 cups Mini Marshmallows
- 8 tablespoons Butter (Sweet Cream, Salted)
- Ghirardelli White Chocolate Melting Wafers (approx. 50)
- Wilton Color Right Food Coloring System
- Cookie Cutters
Instructions
- For each color of Rice Krispie Treats you make you will need an individual batch made with 2 tablespoons of butter, 2 cups of marshmallows, and 2 cups of Rice Krispies Cereal. Melt the butter in a large pan on medium heat. Add the marshmallows and stir until melted.
- To tint the Rice Krispie Treat mixture Blue, Purple, Pink, and Yellow add food coloring to the melted marshmallow mixture before you add the Rice Krispie cereal.
- Pick fun Spring/Easter-themed cookie cutters like a bunny, a butterfly, a tulip, and a duck.
- Once the mixture had cooled enough to handle fill the cookie cutters with the Rice Krispie Treat mixture to form the Rice Krispie Treat. Push the Rice Krispie Treat out of the cookie-cutter and place it on a cookie sheet to cool and firm up.
- To dip the Treats in White Chocolate, place 25-30 white chocolate melting wafers in a bowl and melt them in the microwave. Started with 30 seconds, stir the chocolate and then microwave for another 10 seconds. Continue this process in 10-second intervals until the wafers are melted.
- Lay the Rice Krispie Treats into the bowl of chocolate and swish it around a bit to get the chocolate up the sides.
- Place the Rice Krispie Treat on a piece of parchment paper, chocolate side up to dry. Re-dip the treat a second time if you want a good layer of White Chocolate on the bottom of the treat.

Food Coloring Amounts:
Yellow: 2 drops of yellow Wilton Color Right Food Coloring
Blue: 2 drops of Blue Wilton Color Right Food Coloring
Pink: 2 small drops of Pink Wilton Color Right Food Coloring
Purple: 4 drops of Pink Wilton Color Right Food Coloring and 2 drops of Blue Wilton Color Right Food Coloring
