I used zest from both a lemon and orange because I had both on hand. I didn’t have any brandy but had Fireball Whiskey which is a cinnamon flavoured whisky. This recipe is wonderful. It is not the sickly sweet jarred mincemeat. It is both spicy with just enough sweetness to make it tasty. Once it is in the pastry shells it will be terrific. I don’t want to hurt anyone’s feelings but sometimes many comments made that something is missing or wrong are usually the result of the reader misreading or skipping over parts of the recipe. I would suggest that if you think something is wrong carefully read the recipe before commenting. Thanks for posting. I will keep this recipe for next year. I may even just make it early in 2021 to mature for next Christmas. Christmas wishes to you and your family. Keep safe.

Hi, thanks for catching that. It is 1/8 teaspoon Ground Cloves and you should add them when you add the fruit and the sugars!
