Hi Giselle – yes to the cacao instead of the brown food coloring. We have done that before. As to freezing them as balls, this is a wet-ish cookie dough. I’ve never tried rolling into a ball. I’m not sure if the marbling would look the same. But if you try it we’d be interested to know how it worked.
