Chocolate Dipped Peanut Butter Cookies

I love baking for Christmas. Every year Laurie and I try to come up with a fun and different cookie to add to our Holiday Baking list. Our brainstorming usually starts with an ingredient and then we go from there. This time we started with two ingredients … peanut butter and chocolate. Two great tastes that taste great together! We ended up with these super yummy and easy-to-make Chocolate Dipped Peanut Butter Cookies that are both super yummy cookies and a fun Christmas Cookie for your family.

How to Make the Peanut Butter Cookie Dough
Step 1: To make the Peanut Butter Cookie dough, cream the butter and peanut butter in a mixer until fully combined. Add 1/2 cup of flour and mix until the flour is incorporated. Mix in granulated sugar and brown sugar. Mix in eggs and vanilla until the dough is fluffy. Add in baking soda and baking powder. Finally, mix in the remaining 2 cups of flour, 1 cup at a time.
Step 2: Take a spoonful of cookie dough, roll it into a ball and place it on a cookie sheet. Gently press down on the ball a bit to flatten it slightly. Bake the cookies in a 375-degree oven for 7-9 minutes.
Decorating the Cookies
Step 3: Once the Peanut Butter cookies have completely cooled you get ready to dip them in the chocolate. We used Ghirardelli Chocolate Dark Melting Wafers but you could also use Semi-Sweet or Milk Chocolate Chips. Melt the chocolate slowly in the microwave, stopping to stir approximately every 10 seconds until the chocolate is fully melted. We dipped one-half of each peanut butter cookie into the chocolate.
Step 4: Use a spoon to smooth out the chocolate on both sides.
Step 5: We placed the cookie on a piece of parchment paper to allow the chocolate to cool.
Step 6: While the chocolate was still warm we gave the cookies added some pretty Holiday sprinkles. Let the cookies set out until the chocolate is completely cooled. Then wrap them in parchment paper or foil and store them in an airtight plastic container until you are ready to serve them.

- 1 cup Peanut Butter
- 1 cup Granulated Sugar
- 1 cup Brown Sugar (packed)
- 2 Eggs
- 2 tsp. Vanilla
- 2 1/2 Cups Flour
- 1 tsp. Baking Soda
- 1 tsp. Baking Powder
- Ghirardelli Chocolate Dark Melting Wafers
- Christmas Confetti Sprinkles
